Brunch at home - Poached Egg and Salmon Muffins

Fancy, protein packed, and delicious; a winning combination! This recipe can be switched up in many ways but here is the classic brunch item - a toasted english muffin topped with smoked salmon, poached eggs, and hollandaise sauce.

Ingredients:

  • 2 english muffins

  • 120g smoked salmon

  • Sunflower or olive oil spread

  • 4 whole eggs

  • 2 egg yolks

  • Squeeze of lemon

  • Salt and pepper



  1. First step is to make the hollandaise sauce, in a small pan slowly melt 1 tbsp of your chosen spread - take the melted spread off the heat and then add two egg yolks and a squeeze of lemon juice, stir slowly and make sure your eggs do not cook - the mixture should remain liquid. Set aside away from heat.

  2. Boil some water in a pan and season with salt. Once the water is boiled reduce the temperature down so the water simmers.

  3. As this is happening, slice the muffins in half and butter each side, and leave to toast on a griddle or under a grill, turning once when necessary.

  4. Back to the simmering water, make a whirlpool in the water using a metal spoon, crack and egg into the water in the direction of the flow. Keep swirling the water, if required and remove the egg after 2-3mins, leave the egg to rest in an empty bowl. Continue poaching the remaining 3 eggs using this method.

  5. Time to plate up! Place two english muffins on a plate, add 30g of smoked salmon on each muffin and top with a poached egg.

  6. Drizzle over the hollandaise sauce you prepared earlier. Then top off with a little bit of black pepper.

Notes: You can switch this dish up in many ways - cream cheese+salmon, salmon+pesto, egg+ham, vegan cream cheese+carrot - the opportunities are endless.


This dish is all about timing, getting each component ready in time can be a tough act to juggle. You can prep the muffins and sauce beforehand whilst you focus on making the perfect poached eggs.
