Quick and easy pasta bowl (child friendly recipe+dairy free!)

Tomato based pasta bowl which can be meal prepped in advance - suitable for on the go lunches or a small meal to hit your macros throughout the day. The recipe itself is quick and simple, if you have small children you can even make it with them as your sous chefs!

Ingredients:

  • 100g dried pasta

  • 150g passata

  • 1 tsp onion powder

  • 1 tbsp minced/chopped garlic

  • 2 tsp mixed herbs

  • Salt and pepper

  • 30g of cheese alternative (Tesco's grated mozzarella alternative is great for this).

  • Basil (for serving)

  • Grated Violife vegan parmesan (for serving)



  1. Boil the pasta in a pan until al dente (firm to the bite) about 9-10 mins, if you would like it a bit softer leave it for 15 mins.

  2. Whilst the pasta is boiling, combine the 150g passata, 1 tsp of onion powder, 1 tbsp of minced/chopped garlic, 2 tsp of mixed herbs in a bowl and set to the side. Season with salt and pepper.

  3. Drain the pasta, once ready, try to leave a tbsp of pasta water in the pan.

  4. Using the same pan, add the drained pasta and the tomato sauce mixture, cover and leave to simmer for 5 mins.

  5. Sprinkle in 30g of grated cheese to the pasta and allow to melt so the sauce becomes thick and creamy.

  6. Serve in a big pasta bowl and garnish with some fresh basil leaves and maybe a sprinkle of vegan parmesan.

Notes: For an extra protein boost you can add a cube of baked tofu to this dish or to make it a more hearty meal you can pair this with some garlic bread and side salad.

I like to prepare this meal in bulk and keep it in the fridge so I can grab it for my work lunches.
